The official name is probably just: "Scuderia Ferrari Simulatore" plus some italian codename representing the version. Like "S.F.S. Mozarella" or something like that....

there's not a whole lot of information about it, but the info I've read says they were/are using a system developed by/with Moog human-in-the-loop hardware and have developed their own software in-house.
Moog make a lot of commercial simulators, and they also make servo valves for the F1 cars themselves.
